Ingredients
- 8 oz rice noodles
- 1 lb shrimp
- 3 tbsp fish sauce
- 2 tbsp tamarind paste
- 2 tbsp palm sugar
- 3 eggs
- 1 cup bean sprouts
- 3 green onions
- 1/4 cup peanuts, crushed
- 2 tbsp oil
- 2 cloves garlic
- Lime wedges
- Cilantro for garnish
Instructions

Soak rice noodles in warm water until soft

Mix fish sauce, tamarind paste, and palm sugar for sauce

Heat oil in wok, scramble eggs, set aside

Stir-fry garlic and shrimp until pink

Add drained noodles and sauce, toss well

Add bean sprouts, green onions, eggs, garnish with peanuts and cilantro
