Bacon-Wrapped Scallops

Ingredients
- 12 large sea scallops
- 6 slices bacon, halved
- 2 tbsp olive oil
- 1 tbsp brown sugar
- 1/4 tsp smoked paprika
- Microgreens for garnish
- Lemon wedges
Instructions

Pat scallops dry, remove side muscle if attached

Wrap each scallop with half slice of bacon, secure with toothpick

Mix brown sugar and paprika, sprinkle over scallops

Heat olive oil in oven-safe skillet over high heat

Sear scallops 2 minutes, flip, transfer to 400°F oven for 4 minutes

Garnish with microgreens, serve with lemon wedges
