Ingredients
- 2 lb beef tenderloin
- 1 lb puff pastry
- 8 oz mushrooms, minced
- 4 oz pâté
- 8 thin slices prosciutto
- 2 egg yolks
- 2 tbsp Dijon mustard
- 2 tbsp olive oil
- 1 shallot, minced
- 2 tbsp fresh thyme
- Salt and pepper
Instructions

Sear beef in hot oil until browned all over, cool completely

Sauté mushrooms and shallot until moisture evaporates

Brush beef with mustard, spread with pâté and mushroom mixture

Wrap in prosciutto, then in plastic wrap, chill 30 minutes

Wrap in puff pastry, brush with egg wash

Bake at 400°F for 25-30 minutes until pastry is golden
