Ingredients
- 1 whole chicken (3-4 lbs)
- 12 cups water
- 3 carrots, sliced
- 3 celery stalks, chopped
- 1 large onion, diced
- 3 cloves garlic, minced
- 2 bay leaves
- 1 teaspoon thyme
- 8 oz egg noodles
- Salt and pepper to taste
- Fresh parsley, chopped
Instructions

Place chicken in large pot with water, bring to boil

Simmer for 1 hour until chicken is tender

Remove chicken, shred meat when cool

Strain broth and return to pot

Add carrots, celery, onion, garlic, bay leaves, and thyme

Simmer for 20 minutes until vegetables are tender

Add noodles and cook for 8-10 minutes

Return shredded chicken to pot

Season with salt and pepper

Garnish with fresh parsley
