Ingredients

  • 2 cups heavy cream
  • 1 vanilla bean
  • 6 egg yolks
  • 1/4 cup sugar plus extra for topping
  • Pinch of salt

Instructions

Preheat oven to 325°F, heat cream with vanilla bean

Whisk egg yolks with sugar until pale

Gradually add hot cream to egg mixture

Strain mixture and divide among ramekins

Bake in water bath 35-40 minutes until just set

Chill 2 hours, sprinkle with sugar, torch until caramelized
