  • Coarse salt
  • Fresh thyme
  • Bay leaves
  • Garlic cloves
  • Potatoes

Salt cure duck legs overnight

Rinse and pat dry

Confit in duck fat at 200°F for 3 hours

Crisp skin under broiler

Roast potatoes in duck fat
