French Onion Soup
Rich, caramelized onion soup with melted Gruyère cheese

Ingredients
- 6 large yellow onions, sliced
- 4 tbsp butter
- 2 tbsp olive oil
- 1 tsp sugar
- 1/2 cup dry white wine
- 8 cups beef stock
- 2 bay leaves
- 4 sprigs fresh thyme
- Salt and pepper
- 8 slices French bread
- 2 cups Gruyère cheese, grated
Instructions

Cook onions in butter and oil over medium-low heat 45 minutes

Add sugar, cook until deep golden brown

Add wine, scrape up browned bits

Add stock, bay leaves, thyme, simmer 30 minutes

Season with salt and pepper, remove herbs

Top with toasted bread and cheese, broil until bubbly
