- 1 whole chicken (4-5 lbs)
- 2 lemons
- 4 cloves garlic
- 1/4 cup olive oil
- 2 tbsp butter, softened
- 2 tbsp fresh rosemary
- 2 tbsp fresh thyme
- 1 tbsp fresh sage
- Salt and pepper
- 1 onion, quartered
- Vegetables for roasting

Preheat oven to 425°F, pat chicken dry

Mix softened butter with minced herbs, garlic, lemon zest

Loosen skin and spread herb butter under skin

Stuff cavity with lemon halves and onion quarters
