Loaded Baked Potato Soup

Ingredients

  • 6 large russet potatoes
  • 6 slices bacon
  • 1/4 cup butter
  • 1/4 cup flour
  • 3 cups whole milk
  • 1 cup heavy cream
  • 1 cup cheddar cheese
  • 1/2 cup sour cream
  • 4 green onions, chopped
  • Salt and pepper

Instructions

Bake potatoes at 425°F for 45 minutes, cool and dice

Cook bacon until crispy, reserve fat, crumble bacon

Make roux with butter and flour in large pot

Gradually add milk and cream, cook until thickened

Add diced potatoes and simmer 15 minutes

Stir in cheese, sour cream, bacon, and green onions
