Lobster Risotto with Saffron

Ingredients
- 2 lobster tails
- 1 1/2 cups Arborio rice
- 5 cups warm seafood stock
- Pinch of saffron
- 1/2 cup white wine
- 1 shallot, minced
- 2 cloves garlic, minced
- 4 tbsp butter
- 1/2 cup Parmesan cheese
- 2 tbsp olive oil
- Fresh chives
- Lemon zest
Instructions

Cook lobster tails, remove meat and chop, reserve shells for stock

Steep saffron in warm stock

Sauté shallot and garlic in olive oil until soft

Add rice, toast 2 minutes, add wine and stir until absorbed

Add stock one ladle at a time, stirring constantly, 18-20 minutes

Fold in lobster, butter, Parmesan, garnish with chives and lemon
