Mediterranean Chickpea Salad

Ingredients

  • 2 cans chickpeas, drained
  • 1 cucumber, diced
  • 2 tomatoes, diced
  • 1/2 red onion, sliced
  • 1/2 cup Kalamata olives
  • 1/2 cup feta cheese
  • 1/4 cup fresh parsley
  • 2 tbsp fresh mint
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp oregano
  • Salt and pepper

Instructions

Rinse and drain chickpeas thoroughly

Dice cucumber, tomatoes, and slice onion thinly

Combine chickpeas with vegetables in large bowl

Add olives, feta, parsley, and mint

Whisk olive oil, lemon juice, oregano, salt, and pepper

Toss salad with dressing and let marinate 30 minutes
