Ingredients
- 2 lbs mixed mushrooms
- 1 sheet vegan puff pastry
- 1 large onion
- 4 cloves garlic
- 1/2 cup walnuts, chopped
- 2 tbsp soy sauce
- 2 tbsp balsamic vinegar
- 2 tbsp olive oil
- 2 tbsp fresh thyme
- 1 cup spinach
- Plant milk for brushing
- Salt and pepper
Instructions

Sauté onion and garlic until soft

Add mushrooms, cook until moisture evaporates

Season with soy sauce, balsamic, thyme, salt, pepper

Cool mixture, then mix in walnuts and spinach

Wrap filling in puff pastry, seal edges well
