One-Pan Pasta Primavera

Ingredients

  • 12 oz penne pasta
  • 2 cups vegetable broth
  • 1 cup heavy cream
  • 2 zucchini, sliced
  • 1 bell pepper, strips
  • 1 cup cherry tomatoes
  • 1 cup frozen peas
  • 3 cloves garlic, minced
  • 1/2 cup Parmesan cheese
  • 2 tbsp olive oil
  • Fresh basil
  • Salt and pepper

Instructions

Heat olive oil in large skillet, sauté garlic 1 minute

Add pasta, broth, and cream to pan

Bring to boil, then simmer covered 15 minutes

Add zucchini, bell pepper, tomatoes, and peas

Cook 5 more minutes until pasta is tender

Stir in Parmesan and fresh basil, season to taste
