Ingredients

  • 8 oz rice noodles
  • 1 lb shrimp, peeled
  • 3 tablespoons fish sauce
  • 2 tablespoons tamarind paste
  • 2 tablespoons brown sugar
  • 2 eggs
  • 1 cup bean sprouts
  • 3 green onions, chopped
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1/4 cup peanuts, crushed
  • Lime wedges
  • Cilantro for garnish

Instructions

Soak rice noodles in warm water until soft

Mix fish sauce, tamarind paste, and brown sugar

Heat oil in wok, scramble eggs and set aside

Stir-fry garlic and shrimp until pink

Add drained noodles and sauce, toss well

Add bean sprouts and green onions

Return eggs to pan, toss everything together

Garnish with peanuts, cilantro, and lime wedges
