Poke Bowl with Ahi Tuna

Ingredients

  • 1 lb sushi-grade ahi tuna, cubed
  • 2 cups cooked sushi rice
  • 2 tbsp soy sauce
  • 1 tbsp sesame oil
  • 1 tsp rice vinegar
  • 1 cucumber, diced
  • 1 avocado, sliced
  • 1 cup edamame
  • 2 tbsp sesame seeds
  • Nori sheets, sliced
  • Wasabi
  • Pickled ginger

Instructions

Dice tuna into 1/2-inch cubes

Mix soy sauce, sesame oil, rice vinegar for marinade

Marinate tuna for 15 minutes

Arrange sushi rice in bowls

Top with marinated tuna and all vegetables

Sprinkle with sesame seeds and nori, serve with wasabi
