Ingredients
- 1 cup quinoa
- 2 cups water
- 2 cups kale, massaged
- 1 cup roasted sweet potato
- 1 cup chickpeas, roasted
- 1 avocado, sliced
- 1/2 cup cherry tomatoes
- 1/4 cup pumpkin seeds
- 2 tablespoons tahini
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- 1 teaspoon honey
- Salt and pepper to taste
Instructions

Cook quinoa with water until fluffy, about 15 minutes

Roast sweet potato cubes at 400°F for 25 minutes

Roast chickpeas with olive oil and spices for 20 minutes

Massage kale with a little olive oil and lemon

Make dressing with tahini, lemon juice, olive oil, and honey
