Quinoa Buddha Bowl

Ingredients

  • 1 cup quinoa
  • 2 cups water
  • 2 cups kale, massaged
  • 1 cup roasted sweet potato
  • 1 cup chickpeas, roasted
  • 1 avocado, sliced
  • 1/2 cup cherry tomatoes
  • 1/4 cup pumpkin seeds
  • 2 tablespoons tahini
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1 teaspoon honey
  • Salt and pepper to taste

Instructions

Cook quinoa with water until fluffy, about 15 minutes

Roast sweet potato cubes at 400°F for 25 minutes

Roast chickpeas with olive oil and spices for 20 minutes

Massage kale with a little olive oil and lemon

Make dressing with tahini, lemon juice, olive oil, and honey

Assemble bowls with quinoa as base

Top with kale, sweet potato, chickpeas, avocado, and tomatoes
