Quinoa Power Bowl with Tahini Dressing

Ingredients

  • 1 cup quinoa
  • 2 cups vegetable broth
  • 1 sweet potato, cubed
  • 1 cup broccoli florets
  • 1 cup chickpeas
  • 2 cups baby spinach
  • 1 avocado, sliced
  • 1/4 cup pumpkin seeds
  • 3 tbsp tahini
  • 2 tbsp lemon juice
  • 1 tbsp maple syrup
  • 2 tbsp olive oil
  • Salt to taste

Instructions

Cook quinoa in vegetable broth for 15 minutes

Roast sweet potato and broccoli at 400°F for 25 minutes

Sauté chickpeas with olive oil and spices

Whisk together tahini, lemon juice, maple syrup for dressing
