- 1 cup quinoa
- 2 cups vegetable broth
- 1 sweet potato, cubed

- 1 cup chickpeas
- 2 cups baby spinach
- 1 avocado, sliced
- 1/4 cup pumpkin seeds
- 3 tbsp tahini
- 2 tbsp lemon juice
- 1 tbsp maple syrup
- 2 tbsp olive oil
- Salt to taste
Instructions
