Ingredients
- 5-6 lb beef brisket
- 1/4 cup coarse salt
- 1/4 cup black pepper
- 2 tbsp paprika
- 2 tbsp garlic powder
- 1 tbsp onion powder
- Wood chips for smoking
Instructions

Trim brisket, leaving 1/4 inch fat cap

Mix all dry ingredients for rub

Apply rub generously, let sit overnight

Smoke at 225°F for 12-16 hours until tender

Wrap in butcher paper when internal temp reaches 165°F

Rest for 1 hour before slicing against the grain
