Ingredients
- 1 lb spaghetti
- 6 oz pancetta, diced
- 4 large eggs
- 1 cup Parmesan cheese, grated
- 2 cloves garlic, minced
- Black pepper, freshly ground
- Salt for pasta water
- Fresh parsley for garnish
Instructions

Cook spaghetti in salted water until al dente

Cook pancetta in a large pan until crispy

Whisk eggs with Parmesan and black pepper

Add garlic to pancetta and cook for 1 minute

Drain pasta, reserving 1 cup pasta water

Add hot pasta to pancetta, remove from heat

Quickly stir in egg mixture, adding pasta water as needed

Serve immediately with extra Parmesan
