Ingredients
- 1 lb chicken breast, sliced
- 2 cans coconut milk
- 2 cups chicken stock
- 3 lemongrass stalks
- 1 inch galangal, sliced
- 4 kaffir lime leaves
- 4 Thai chilies
- 8 oz mushrooms
- 3 tbsp fish sauce
- 2 tbsp lime juice
- 2 tsp palm sugar
- Cilantro for garnish
Instructions

Bruise lemongrass and galangal with knife handle

Simmer coconut milk with aromatics for 10 minutes

Add chicken stock and bring to boil

Add chicken and mushrooms, cook 5 minutes

Season with fish sauce, lime juice, palm sugar

Strain if desired, garnish with cilantro and chilies
