Zucchini Noodles with Pesto

Ingredients

  • 4 medium zucchini
  • 2 cups fresh basil
  • 1/3 cup pine nuts
  • 3 cloves garlic
  • 1/2 cup Parmesan cheese
  • 1/2 cup olive oil
  • Cherry tomatoes
  • Salt and pepper

Instructions

Spiralize zucchini into noodles using spiralizer

Make pesto by blending basil, pine nuts, garlic, and olive oil

Add Parmesan cheese and season with salt and pepper

Lightly sauté zucchini noodles for 2-3 minutes
